The Stuff Memories Are Made Of

In life, there are what we call memory-making moments, ones that go down "in the books".

This time leading up to my surgery (it's today!!) spent with my mama has gifted me with lots of brown paper packages memories tied up with string. These are a few of my favorite things...


...Hours into a Jerseylicious marathon, my mama asked "Why do these girls act like this?" to which I deadpan responded "B*tches be crazy". I think she almost peed herself. That went straight to the top of the memory leader board.

...Rocky trotted up to the growing pile of flowers my mama was gathering for a vase & faster than I could say "Oh no" he thought it was as good a place as any to raise his leg. Ever the cool calm & collected mom that finds the humor in every nook & cranny of life, she said "Well, those are garbage. New plan!"


...That expression Mr. A had when my mom & I said "Butter makes everything better" at the same time.

...Last week, a mobile vet came by to give Macy Man a check up & asked if there was anything we could do to make him stop purring so loudly (because she couldn't hear his heartbeat). What can we say? He's one happy purrball.

...Here's one last memory for the books! I made my newfangled banana bread recipe for my mom to try & after one melt in your mouth bite she said "I think you've surpassed me on the banana bread making skills."  Warm.  Fuzzy.  Feeling.





Caramelized Banana Bread
Ingredients:
3 ripe bananas
1 tablespoon butter
⅔ cup vegetable oil
⅔ cup lightly packed brown sugar
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
5 tablespoons milk

Directions:

1. Cut each banana in half then slice each section lengthwise (ending up with twelve pieces of banana).
2. Add the butter to a medium-high heated pan (it should sizzle). Add the bananas & brown until they caramelize a bit (1-2 minutes on each side). Give yourself a high five when they look like this!


3. Let them cool on a plate while the oven preheats to 350°.
4. When the oven's ready combine the oil, brown sugar & vanilla in a large bowl.
5. In a separate bowl, combine the flour, baking soda, salt & baking powder.
6. Mash the bananas & add them to the oil mixture.
7. Then add the dry ingredients all at once & stir until almost incorporated.
8. Stir in the milk to bring it all together.


9. For a bit of pizazz, I sprinkle a layer of this on the loaf!! (Found @ craft or grocery stores.)
10. Cook for 40-50 minutes in a loaf pan. (Or 20 minutes to make 12 muffins.)




One more thing...have a great day on purpose! (Lick the bowl clean after making this recipe. Go ahead! There aren't any eggs in the batter. Although, who am I kidding?, that never stopped me before!)

Am sitting on my couch here in NYC and this just made me homesick for the days we would eat warm banana bread with ricotta and honey in the sun filled lounge room of our house in Melbourne. I cannot wait to try this recipe - it looks seriously delicious and will replace the one I have. Hope you have a wonderful weekend!
